Sweet & Sour Chicken |

chicken thigh, cut into cubes
arrowroot flour coconut oil red capsicum, diced brown onion, diced pineapple, diced (optional but highly recommended) Sauce apple cider vinegar low sugar tomato sauce soy sauce sugar-free maple syrup |

METHOD: |
1. Coat chicken in arrowroot flour.
2. Heat the coconut oil in a non-stick fry-pan. 3. Once hot, fry the chicken in batches until it starts to get crispy, Set aside. 4. In the same pan, add the onion and garlic. 5. Add in the capsicum and cook until the onion has softened. 6. Add the chicken back to the pan and add in the sauce ingredients, Stir well. 7. Once the chicken is cooked through, stir in the pineapple and cook for 1-2 minutes. |
